Choosing an arm microcontroller for an specific application

Hello,

I am looking for a microcontroller based on arm that best fits our application. The application diagram is as follows:

Here, the weighing machine is pre built and configured. We need to interface a keypad, two 4 or more digit seven segment LED displays for displaying rate and amount. The weighing machine just sends a weight signal to the microcontroller through RS-232. The rate for that particular weight is entered through the keypad and then when I press the enter button on the keypad, it should display the amount (weight * rate) on another seven segment display. There will also be a mini thermal receipt printer interface to the microcontroller through RS-232.
Can you please suggest a development board as well ?
